Rice Flour Gnocchi Recipe
Gnocchi is a type of pasta that cannot be missing in the homes of many Brazilians! It can be prepared with various base ingredients, from potatoes, pumpkin, to cassava. At Specialfood we teach you how to prepare gluten-free gnocchi using rice flour. Check out the walkthrough below and try it out!
Ingredients for making rice flour gnocchi:
3 large potato units
1 cup of rice flour
2 tablespoons of sunflower oil
1 teaspoon of salt
How to make Rice Flour Gnocchi:
To prepare the rice flour gnocchi start by peeling the potatoes, cutting them into pieces and cooking in a pan with water and salt. Turn off when they are soft.
After cooking, drain the broth, reserving 1 cup of this amount. Mash the potatoes in the pan, add the oil, ¾ of the rice flour and the reserved stock. Turn the heat back on and mix until you get a mashed potato-like consistency, as in the photo.
Turn off the heat, let it warm and add the remaining rice flour. Transfer the gluten-free gnocchi dough to a floured surface, knead into a smooth, compact dough, and form into rolls about 1.5 centimeters thick.
Cut the gnocchi rolls into pieces and cook in plenty of salted water and a few drops of oil. When the gnocchi rise to the surface, remove them with a skimmer.
Your rice flour gnocchi is ready! Serve immediately with, for example, gluten-free white sauce and mushrooms in a light oven. Enjoy your food!
